The temperatures are mild today - but by the weekend they are talking about the possibility of snow in the forecast. As we prepare for colder weather - it sounds like a perfect week to try Monticello Real Estate Agent, Dana Farrell's favorite go-to recipe. This is an easy recipe for busy weeknights. You can even prep it ahead of time and re-heat it later on.

This recipe is in her dinner rotation, as she is always on the go. Dana is a busy real estate agent and is either showing homes or working with clients on design ideas.  She owns her own company called Bundle it Home. Dana's company is an architectural and interior design company specializing in construction management. Her philosophy in real estate and design is to find out what the client truly wants or needs for their personal or work environment, and then make it come to life.

Dan also loves to sing - so if you don't find her working  - or cooking her gumbo - you will surely find her singing a tune at a local bar around town.

Chicken And Shrimp Gumbo

Note - if you don't like shrimp - you can use sausage.

4 breast of chicken

8 Cups of Organic Veg. Stock

1-2 cups of small shrimp or 1 pound of sausage

Hot Sauce, Salt, Pepper, Grapeseed Oil (taste test)

Yellow Cherry Tomatoes (1 container)

1-2 Cups Jasmine Rice (White Rice)

Dice chicken breast and slowly sautéed on low with 2 tbsp of Oil ( cook for about 10 mins)

In a big pot but veg. stock, semi- cooked chicken breast + seasonings ( simmer, gets bubbly)

Add Shrimp, Tomatoes ( low heat)

Add Rice + mix and cook on low heat ( taste test for seasonings) ( I do not measure)

Add Sour Cream, Tortillas for a topping  ( optional)
